Mother's Whole Wheat Applesauce Cake Recipe circa 1940's
Here is another delicious recipe from my Mother's recipe box. She wrote this recipe on a little slip of paper and tucked it neatly into the back of her recipe box. I loved this cake when I was a child. Please let me know what you think of it!
The recipe calls for One-half cup fat, which I replace with 1 stick of homemade butter. Margarine can also be used. My Mother used 1/2 cup of bacon fat which I don't recommend. That was a long time ago and I cringe thinking of it now.
Whole Wheat Apple Sauce Cake
One-half cup fat (1 stick butter or margarine)
1 cup Sugar (brown or white)
1 1/2 cups thick, unsweetened apple sauce (I use Organic apple sauce)
1 cup seedless raisins
2 1/2 cups whole-wheat flour
1 1/2 teaspoons baking soda
1/2 teaspoons salt
2 whole eggs, beaten
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 teaspoon cloves
Cream fat (butter) and sugar together.
Add apple sauce, then beaten eggs.
Mix raisins with 1/2 cup of flour.
Mix rest of flour with baking soda, salt and spices.
Then add all dry ingredients to liquid mixture.
Beat well. Pour into well greased pan and bake in very moderate oven (300-325 degrees fahrenheit for about 1 hour.
Tips: The cake is done when the sides pull away from the pan. Another tip is to insert a toothpick into the center of the cake. If it comes out dry, the cake is done. If it comes out wet, bake a few minutes longer.
